Editing facts and updating online tree

Hello, I have two questions:

1. My family tree is based on a GEDCOM that's been through the hands of a few other people. I'm slowly trying to standardise the layout. One thing I don't like is 'individual facts'. When you create a report these seem very 'bity'. So I prefer just to type out a narrative in chronological order in 'Person Notes'.

The thing is, I know how to delete facts (Person > highlight fact, press delete) but I don't know how to create them or edit them. It would be useful to know, because often when I'm trying to copy information from a fact half the 'fact sentence' seems to be cut off. So what is the best way to view and edit facts?

2. I have uploaded my tree to ancestry and kept it private (mostly because I know it contains mistakes and I don't want those to be perpetuated). I didn't set it to link with my tree on FTM which is where I do all the work (I just don't like the idea of a 'live' version being online). However, I've recently done a bit of a clean-up of one main branches of my family and now I wish to update my online tree (someone is asking to see a bit) ... how do I do that?

p.s. I have FTM 2014 and this is the first and only version I've ever had (hence my newbishness).
