I created my book through blurb.com with SmartBook, although they have a newer product that's probably better. You can see it at http://www.blurb.com/b/3944733-genealogical-journeys. I find the reports to be repetitive and boring from really any database system available and I tried to add interesting family stories as much as possible. This was the process I used:
Create a Smart Story under Publish - you can do several people in a row.
Save if you want - or highlight and copy and paste into a text editor/SmartBook.
Edit text and add documents and photos.

Two things will probably happen occur to you as you create it - you need a way to organize it and holes in your data will appear or new evidence in the old documents will lead you somewhere you didn't think about before. I found that it was easiest for me to split the book between my parents, then start with their parents with their father on the left and their mother on the right on facing pages. Further text and documents were then added behind those pages. Once all documents and pictures were added for them I laid out the next couple on facing pages and then their evidence. Whenever necessary I added pages for a place or event that affected them specifically - for example: the Great Chicago Fire or background on Ayrshire, Scotland with maps. The internet has great photos and maps for almost any subject.

As for new evidence or holes you find - if you're like me the research could go on forever! You just have to decide to stop at some point and publish. Luckily, these days there are lots more quality publishing options and the prices are far better than they used to be. On blurb you can offer hard or soft cover as well as ebook and/or pdf formats. I have mine priced so that I net about $10 for anyone in the family that wants to buy a hard copy. That way I can recoup a small portion of my expenses and get a notice when someone buys my book! It's a thrill!
