I am certainly no expert in Jewish genealogy resources but here are a couple of tips.
1. Jews did use surnames untill mandated to do so by Napoleon in the late 1700s. They often adapted or adopted other surnames, whether Germanic, Polish or other and therefore Schutlz can certainly be a valid surname even if contrary to your family religion, ethnicity or origins.
2. I did find a Morris Schultz entering the States through Ellis Island in 1897. Since you did not provide an age, I cannot be certain he is the correct one. Use
http://www.jewishgen.org/databases/EIDB/ellisgold.html? to do the search. Set the surname search for "sounds like", insert given name as "exact" and the time frame from 1895 to 1900.
When you get your result, view the original entry rather than the extraction. It gives ethnicity as Russian but I am questioning the last place of residence. It almost seems like he may have been living in Ireland for the last decade. That will require further investigation.
