The 'crest' is the bit that sits on top of the helmet. The 'bit' to which I think that you may be referring is the shield (the Arms).
Do you know for a fact that those are your Grandfather's Arms, or are they just the Arms of a person with that surname? See <<
http://www.sog.org.uk/leaflets/arms.html >> for more info on this aspect of Heraldry. Unfortunately, I cannot find any arms registered in the surname of ANYAN in either British [England, Wales, Scotland, Ireland] heraldry or the heraldry of continental Europe [the remainder of Europe outside the British Isles]. From where did you get the information that the heraldic design was for the surname of Anyan?
A lot of arms have been designed using a 'cant' [a pun or word play on the name] of the surname of the armiger. Unfortunately, other than the canting of arms, there is no published default symbolism for any heraldic design. The symbolism is confined to the armiger and the Herald who produced the design - who knows what was in their minds at the time??
