What's the [heraldic] portrayed difference between a young and an old Lion?
The official blazon for the crest is:

According to my records, there is no Irish connection - they are all either English or from the Leeward Islands. I see no mention of Norman ancestry, which is still a possibility, though - the origin of the surname apparantly comes from the name of the village of Stapleton in the parish of Darington, near Pontefract, Yorkshire, along with other parishes of the same name in Gloucestershire, Cimberland and Shropshire.
