<<The shield has a young lion and above the shield in the head of a Serasen.>>
What's the [heraldic] portrayed difference between a young and an old Lion?

The official blazon for the crest is:
"A Saracen's head couped at the shoulders sidefaced proper wreathed about the temples argent and sable"
.
<<This is for the Irish side of the family. But the family is Norman.>>
According to my records, there is no Irish connection - they are all either English or from the Leeward Islands. I see no mention of Norman ancestry, which is still a possibility, though - the origin of the surname apparantly comes from the name of the village of Stapleton in the parish of Darington, near Pontefract, Yorkshire, along with other parishes of the same name in Gloucestershire, Cimberland and Shropshire.
