I administer 4 tests at Ancestry -- mine and three relatives. It is really easy, especially if the person taking the test does not want to see all the data. It is all done through your Ancestry account. For those relatives who you see in person, ship the test to yourself, use the activation code attached, and then have the relative take the test and mail it off. For those who live farther away (two of mine do) you can either ship the test directly to them and ask them to tell you the activation code OR (as with my elderly non-computer using grandmother) I shipped it to myself, opened it for the activation code, and then shipped it on to her (meaning I had to pay for shipping again).
There is the option now for you to share the ethnicity results with anyone (s the test taker as well if they want). I haven't done that -- my administered test takers are fine with my verbal descriptions of what I have found.
