meaning of headstones without death dates?

I'm supposing it means the headstone was carved before the person died, but then that person was either ultimately buried elsewhere when they did die, or they were buried there when they died but nobody bothered to add the death date? Could it mean either of those things, or only one, or something else?

It could mean both.

I have one ancestor who has no death date on a headstone with his first wife, but he was ultimately buried in another cemetery with his second wife.

But I also have an ancestor who was buried with her mother. She died when the ground was still covered in snow and couldn't be buried until the spring thaw. I suspect by the time she was finally buried, no one remembered when she actually died, so the death date wasn't added.
