In this case I would use the official document (death cert) as the 'more accurate' source for birth and primary source for death.

Once you find the birth certificate, then whatever that says would trump the death cert or headstone for birth date.

Even then, we're relying on what someone is writing down after being told something. Errors are bound to happen.
