Just go into the edit mode on person's profile, and replace the married name with the maiden name.

I'm puzzled, however, about your reference to adding both a maiden name and a married name when creating a new person - that's not my experience, at least on this site. Are you talking about a profile in an Ancestry member tree, or something else?
