"Father Gallitzin's entries of baptisms differed from those of the present day in that the surname given both parents was that of the father, except in cases where the parents were not married: so one can tell by looking at the baptismal register kept by Father Gallitzin whether or not a person whose name is recorded therein was born in lawful wedlock."
So when you read a baptism record which lists the mother's maiden name, then the couple were not married at the time of the baptism. Some couples married later on, but many did not.
