I was going to say the same thing, start in Canton at hist. museum. When I took my first trip to find ancestors in St. Lawrence Co., that was my first stop. I emailed them before & they had info ready before I got there & were very helpful. If you haven't already, check the websites of Anne Cady on Rootsweb, her St. Lawrence info is amazing, so many cemeteries & more. Also be sure to search your ancestor's names on the Northern NY Historical Newspapers site, before you go. It has newspapers from many towns in St. Lawrence Co., much more than I found on the Fulton history site. The town historians in Lawrence & Stockholm were very helpful. The SLCHA website has a list of all the town historians. I met someone at the hist assoc who later emailed me a map showing all the cemeteries in Stockholm that I was researching, so maybe the other towns have a cemetery map. You will enjoy your trip. I can't wait to go back there again.
