With respect to the differences in ages/approximate birth years, personally I do not put a lot of stock into what is provided on the census. Particularly if you only look at one census year. A lot will depend on who is answering the enumerator's questions as well as how "important" birthdays were to people at any given time period. There are also numerous other reasons for the info to be incorrect. I always just use the info as nothing more than a guideline.

For example, just compare this Matthew Kennedy's 1900 census info to his 1910 census info. In 1900, his age is stated as 47 years old. Yet, in 1910, his age is stated as 62 years of age. Same guy, same address. I'll bet in this case it is wife Margaret giving the info in 1900 since he is probably off to work. Also note that her info is fairly consistent. Note also the differences in immigration/naturalization info as stated on the census. The further away in time that you get from the "event" the greater the likelihood that memories fade.
