Have you gone to the microfiche at the Trenton Archives? I am missing a death date too, and I've been slowly going through the rolls by date (Since they are organized by year, then last name) in the hopes of finding something. Also try cemeteries associated with her place of worship. I've had really good luck with Catholic churches and their records. Slightly less luck with Jewish and Protestant ancestors, but you'd be surprised what you can find!

I think there will be a huge sigh of relief among genealogy buffs when the 1940 census is released!
