While the (available) on-line db's have updated since I first posted, I found the additional data you provided on the (unknown) parentage very helpful. Either his wife was not the informant or she didn't know the names of the parents. If it was the case of the wife being the informant, it tells me she (most likely) didn't had contact with her in-laws and her husband didn't talk them, at least by given name.
The census data you provided is indeed for this Pierre Boivin (Peter Wine). I have that data (and more) on this individual, (my apologies, I detest being told by someone who makes a query, "I already had/knew that").
I was researching 2 Pierre Boivins, who were born in the same time frame, in the near/same location in Quebec. They both migrated around the same time to Illinois and served in the Civil War. Further, they both married women with the given name Adelaide, who both went by the diminutive "Lydia".
I have concluded my search on these two Pierre Boivin (Peter Drinkwine and Peter Wine).
