I tried to find Adam on a ship manifest but had no luck (I checked Ancestry and Ellis Island under numerous spelling variations).

My guess is that Adam Wentz is an "Americanized" or English version of his name. The ship manifest would list his name as it was spelled in his native tongue, which appears to be German. Adam is the same in both English and German, but there's a chance that Adam may not have been his given name.
