It seems that the heads of all the beasts on a coat of arms go toward the dexter (viewer's left, bearer's right) side. Why? If I was designing a coat of arms... no not an official one, would it be wrong to have a beast facing the sinister side?

Many shields are divided up into quarters, typically by placing a cross in the middle. Do the different quadrants mean anything?
