The entry isn't in Dutch but Latin as was the custom for Roman Catholic records:
Many of that part of Holland didn't have true last names and I would expect the father of Paulus to be Johannis (or Jan "John") son of Peel or Peregrinus. Very likley we are looking for Johannis' father's first name to be Peel, but we don't really know the last name. Caeltjes, or Kaeltjes could be a true last name.
