Want to create a separate file for a family connected to my initial PAF file. (Separate Jacksons from Stewarts) How do I create a separate GEDCOM file for a particular family? Also, can you include EVERY single person in a book that is connected to your family that means all sides with PAF?

Try changing the default export from "all" to "partial" near the bottom of the export panel, and then playing with the options (press the select button).
