Stubbs or Coppock - which is the correct surname?

Surnames: Davy, Stubbs, Coppock
On her death certificate (1863), Elizabeth Davy's full name is given as "Elizabeth Davenport Davy". On her son George's birth certificate (1838) his mother is listed as "Elizabeth Davy formally Stubbs". William and Elizabeth's children were born between 1822 and 1838, giving a likely marriage date of around 1820. I have found a single record for William Davy marrying Elizabeth Davenport Coppock in 1819 in Prestbury Cheshire, This is correct first name and correct area, but where did the Coppock surname come from? I have searched Ancestry and can find no records linking Coppock and Stubbs. Does anyone have any ideas where to look next or indeed what to look for?
