I have not checked all of the Ximenez, you mentioned, but I have some information on the line of jose Acosta who married Trinidad ximenez in 1882 in Wilson county. Those Acostas are related to my great grandmother Teodora Acosta Martinez of Floresville, previously of Nacogdoches, Texas.
Trinidad and Jose Acosta's son Eduardo, who died in 1926 is buried in a cemetery on now private land (originally owned by the Acostas) near Marcelino Creek, about 4 miles East of Poth, Texas. At last known there was a broken headstone with his name on it.

I also have some information on the Ximenez of Manuel De Jesus Ximenez, whose first wife was Jacoba Olivarez, my maternal grandfather's oldest sister. she passed away and Masnuel de Jesus married Josephine Lopez in 1893.

Sad to say, other than some names I do not have information on Manuel's and Jacoba's 6 or so children.

I would be happy to share what information I have and exchange information anyone may have.
