In relation to Catholic - Protestant marriages, the Ne Temere Decree was not in force in that time which put restrictions on Roman Cathoics marrying other faiths. It did not come in until 1908.
Is possible that your great grandfather was a Roman Catholic, as I came across an Augustinian
priest in Cork with the surname "St. George".
I attach some detail in relation to "St. George's" in Fermanagh and Monaghan going back to 1814. It is quite possible your great grandfather was a son of another branch. You have Capel Edward, son of Howard a clergyman and a lawyer by profession. They appear to be draw to the law and church.
Captain Capel St. George was paymaster for the Fermanagh Militia.
