Back again. Found online the 1855 state census for the Town of Cazenovia, Madison Co., NY:

In it are:
Olcott, Jared, District #2, Dwelling #354, Family #383, Page 82, Line 4, Frame Dwelling Valued at $200, Age 63, Resident 7 Years, 5 in Household, Occupied as Farmer.
Olcott, Riley, Distrct #2, Dwelling #353, Family #382, Page 82, Line 1, Plank Dwelling Valued at $150, Age 24, Resident 10 months, 3 in Household, Occupied as Farmer.
I'd say this is Jared, Jr., son of my gggg-grandfather Jared Olcott, b. 1759, and very possibly Riley is Jared, Jr.'s, son. I've not followed this family. But Jared, Jr., may have moved directly to Cazenovia, Madison Co., from wherever he was previously in Oneida Co.

Now I'm not so sure that Jared, Sr., had a son named Joseph (was from memory--maybe a bad one), though the above is not a full list of his children, only the living ones in 1853. I think the Joseph mentioned in the previous posting might well have been Jared Sr.'s brother, though.
