Thanks very much for this post. I have something to add! I had always thought that LaCaille meant "The Quail," so after reading your post, I decided to look it up in a French dictionary. It seems if the "e" at the end of the name has an accent mark, it means curds or curdled milk---hence cheese. If it doesn't, it means quail. Isn't that interesting?
