I visited Morchard Bishop last week and had a look around the church. Inside I found a carved stone effigy of John Eyston and his wife from c1500. He was a wealthy benefactor of the chruch. This could be a corruption of Elston, in old english? I have found some evidence of Elstons from the census of the late 1800s. However most Elstons seem to be present in 1600s according to my Great Uncle, Frank Elston. Any extra info would be welcome!
