OXNER to EXNER: 1800 to 1880, central NY along Erie Canal

I am trying to find the origins of my gg-grandparents Jonathan DOLBEE and Betsey EXNER, the latter born about 1805 in New York (state), USA.

What I am finding is three brothers John, Nicholas, and Peter (the latter who I think is aka Christopher) OXNER originating from southern Herkimer County in New York State (southeast of Utica) in the 1800 & 1810 censuses; they are just south of what will become (at least a part of) the Erie Canal. Then Christopher takes his family (1820 census) to Galen Township, (what is now) Wayne County, New York, the Erie Canal is just starting up and running right through there. Starting in the 1850 census - when it appears that Christopher & his wife are gone - the children's names change to EXNER; their occupations are Teamsters, with boatmen, blacksmiths, etc around them.

Can anyone help me sort out these OXNERs and EXNERs in Herkimer County, Wayne County, and (some in) Seneca County, New York, in the 1800's? What I'm ultimately looking for are the parents of my Betsey EXNER b. abt 1805 (I'm currently guessing that her father is Christopher; mother's name unknown). I'm also looking for DOLBEE's that departed from Wayne County, NY, in 1831 to 1833, for Ohio & Michigan.

(I realize that John, Nicolas, and Peter are sons of Nicholas OSCHNER / OXNER and Maria FOX; this from online IGI records. It's just that no children are listed for Peter).
