"... I am searching for the surname of Ewe. However, I have came to believe that Ewe was shortened from some other surname. As I have been searching for about 8 years and have came across no other Ewe ..."
You're not alone! There was a Louis and Johanna (Langstad) Ewe family in Washington Co., Wisconsin in the 1860s. I've indexed the marriage notice they published in the German papers (with German verses!), and death of their first child Otto a year later. Louis Ewe is connected in some way with Orsoy, Germany; he received a letter with that postmark. There was also a Walter Ewe Jr. & Sr. in Milwaukee as late as 1931.
