Here's a later update on the G/K vs. EFR saga: Respected Amish researcher and historian Leroy Beachy , in his two-volume "Unser Leit," the story of the Amish, reveals he owns Christian Esh's Froschauer Bible that Christian brought from Europe. In it Christian wrote the names and birth dates of his children, verifying him as our immigrant ancestor. He lists the exact day and year of the birth of each child except in the case of Joseph, for whom he lists only a month, August, 1776. Beachy speculates this is because they were aboard ship during what has been described as a most trying trip, perhaps causing Christian not to be attending so much to record-keeping; this jibes with oral history and other suggestions that immigration occurred in 1776.

Incidentally, for your question about Jacob, Christian lists his birthday as June 8, 1766 ("Den 8 brachmonat (Christi) ist mir Ein Sohn Gebohren Jacob Eosch 1766").
