Back then... many married Italian women kept their maiden names. My own Grandmother kept hers...
In many cases, many Italian women who were married were listed on passenger lists with their maiden names as well.
When it comes to passenger lists, you have the option of either looking for an Italian woman with her maiden name... or married name. I've seen both.
Unfortunately, children were also indexed (on passenger lists) with their mothers maiden surname instead of the father's... can make research a little difficult at times.
