Thank you for your response. I am almost certain that person is the John Joseph Pallier I am looking for although this crime (theft: simple grand larceny) did not get him transported - only confinement for 6 months.
The John Joseph Pallier I am looking for was tried and convicted of burglary in 1829, Croydon / Surrey Assizes and this resulted in him being sentenced to transportation for life. Convict papers (specifically Ship Musters) indicate that he had a previous conviction (6 months).
I will keep a look out for Jane Pallier for you.
