Translation of German letter

I am wondering if anyone would be able to help translating this letter. My mom had someone look at it many years ago and was told that it was an old dialect? and that the handwriting style made it difficult to read. We known it is from my 2x great grandfather to his mother on her birthday. Any assistance would be greatly appreciated!

Hi dennisndrea,

I gave it a try to translate your text. To me it doesn't seem to be old German though it is the handwriting by itself that it makes it difficult to read. I suppose that it was written when your 2x grandfather was still a child ( what was his birth year ? ). German is not my first language but I think you will have the headlines of this letter, only in the last sentence there still some words to decipher .

Dear beloved mother,

Ich gratuliere Dir zu deinem Gebürstag und wünsche Dir nog viele Jahre mit uns zu erleben.
I congratulate you for your anniversary and wish you still many years to go through with us.

Auch wünsche Ich Dir neue ......( wurst ? ) Pfanne und ………………., Ferienbrifen Tag
Also I wish you new …….( sausage ? ) pan and ……………holiday letters Day

He was born in 1851, so he would have been 14. My mother has kept it framed and hanging for years because she liked the thought of his writing to his mother. Thank you so much for your help! No one who has ever seen it has ever been able to tell us anything, so we often had wondered if we wouldn't know what it said. Thank you again so much for taking the time to look and respond.
