Are you sure of your dates? Late 1700s to early 1800s is very early.
The British did not arrive in Australia until 1788, and the French did not arrive in New Caledonia until 1843. In between were a series of explorers but the Australian blackbirding programme did not begin until after the growth of the Queensland sugar plantations.

The only Canadians I know of in Melanesia were the Nova Scotian Presbyterian missionaries in the New Hebrides (Vanuatu).beginning with John and Catherine Geddie in 1848 in Ambrym.
Perhaps your ancestor went back to Canada with a missionary family as a servant. I suggest you get in touch with the Presbyterian Church HQ in Nova Scotia and ask them about their missionaries to the New Hebrides and any Melanesians who came over to Canada with the missionaries Since this would be after 1850 there should be census records in Canada in which he would appear.
