Since my original post I have narrowed down where my ancestors lived, the name and boundaries of the county changed, and perhaps the churches they attended opened, and closed.

Nestor de Jesus Gonzales Rubalcava and Maria Guadalupe Perez Hernandez were married in Floresville, where their three daughters would be baptised, although they actually lived in "Saspamco," on the northern bank of the San Antonio River off U.S. Highway 181, eleven miles northeast of Floresville in western Wilson County. The name Saspamco was derived from the initials of the San Antonio Sewer Pipe Manufacturing Company. Not a very glamorous name!

As far as I can tell the entire family moved to Brackettville, Kinney County, Texas in late 1879.
I called the Catholic Archives and a priest told me their records are private. He said I should contact Salt Lake City. Salt Lake City of course sent me back to Catholic Archives.
County Archives tell me their records begin in the early 1900s, which I know is only partially true.
