The name Minnich is thought to be derived from Munich or other geographic location and like most of the German names in PA is subject to many spellings. My mother I believe used Minnick and I use Minnich as it is so in some of the records.

Katie was grandd of Peter Mennig who had 5 sons and 2 dau, and she was dau of George Peter Minnich and Eliz Rockel, who had 5 dau and one son, Henry, Henry had 6 sons and a dau, I have the names for that generation and one more to appx 1900 but little else, If you email me I can send you that info as gedcom or otherwise.
