I found the Knight family in the Census:
U.S. Census > 1900 United States Federal Census > North Carolina > Macon > Flatts > District 64

She's married to Levi Knight and they were married in 1890 (IF the census is correct.)

Again, IF the census is correct, she's not the mother of all the kids listed, since it says she has 4 living children and 5 are listed.

Do you have access to the census? It includes the months, years of birth...

Mayber her maiden name would be in the marriage record or the birth records of the children...? Or her obit? or in her husband's or children's? I'll keep looking online to see if I can find anything...
