how did they know this?

Classification: Query
Hello,
My question is about something from the usgenweb site for Hillside Cemetery, Clarendon, Orleans, New York.

I can see the index, and am looking at the data for Elizabeth Cowing and her husband, John B Cowing.

I am not sure how this is still readable if it was engraved on the headstone...most stones of that era I have seen are almost unreadable...did someone use death records to give names of parents, or a mention from a history book?...I do not have pictures of these graves, and am very interested in this. Broke though, it took all I had for gen-mad $ to get this far back in time...so just asking Q's and hoping for A's...

I also descend from Thomas Burgess and Christiana Burener...if that was her mother's maiden name, I am eager to know how it is recorded and if there is citation or documentation of any quality for that maiden name.

I do not descend from Elizabeth and John...just trying to do my part to document and remember all the family members...aunts, uncles, cousins, and grandparents...and then I do my duty, and post so that all can find who they are looking for.

Would someone help me with this information?

It is my suspicion that Thomas and Christiana may have descended from Revolutionary War Patriots and or soldiers...and it would be so great to be able to claim my ancestors in the Rev War society...but do not know how sure this all is, or how to proceed with more documentation.
In census I can see Thomas Burgess was born in Pennsylvania, and Christiana, well I can't see the 1855 or 1865 NY State Census...and am not sure if she was born in New York or New Jersey...they died in Pembroke, Genesee County, New York...and that is where they could be found...died two days apart in 1868.

Wish I could afford to go there, and dig around for a while first hand. Nothing quite like a good hands on to tell you what you want to know. Time Machine would be wonderful too.
Wish I could pay for what I want to know, but money is more scarce than information. Just knowing would be great.
Documentation rich, penny pinched.

Oh well, dreaming. But wouldn't that be nice? (time travel)

Ideas? Suggestions?
Thanks for reading this...and for any help that comes my way.
