NEWELL E. DAY b. abt 1856 in Ellery, Chatauqua Co., and ANDREW J. DAY b. abt 1840 in Ellery, " are missing in US Census aftera 1880. Perhaps in the NYS 1892.

Andrew J. Day was a carpenter. Newell E. Day worked as a farmer.

It looks as though all towns in Catt. Co. aren`t listed for the 1892 census at this site. The towns are listed alphabetically & stop at M. Maybe they haven`t finished posting it yet, I don`t know. There is a Feedback button where you could inquire. Hopefully, you`ll get an answer!

The actual census records for towns N-Z are not uploaded yet by LDS to their pilot site, so South Valley is not there. But the index to the surnames for the 1892 census for South Valley is available. It will be placed on the Cattaraugus county Genweb soon. I checked this town's index and the surname DAY is found on page 1 of the 1892 state census for South Valley. If you'd prefer not to wait until LDS places the full census records of this town on their site, you could hire a researcher to pull the record for you in Cattaraugus county.
