Her parents are listed as William Jones and ----- Collins on the marriage record. Can't find her in 1880 or 1900 censuses(Gray or Jones). The pre-1905 Sarpy marriage records don't appear to be indexed (at OPL). No Jones-Gray marriages 1905-1907. And nothing in familysearch for Iowa marriages that matches for Jones-Gray.
