Surnames: Shotwell, McGee, Endsley
I am directly descended from the following families from the Richmond, Ray County area: Shotwell, McGee and Endsley.

I’m in the process of creating a family cookbook as a gift for my mother and aunts and would like to find some “typical” Richmond/Ray County recipes to include. If anyone can help out with this I would really appreciate it.

BAKED SALMON & MACARONI

3 cups cooked macaroni or spaghetti
2 cups salmon
2 cups milk
2 tablespoons butter
1/2 cup battered bread crumbs
salt and pepper

Drain and flake salmon. Remove bones. Fill well-greased baking dish with alternate layers of salmon and macaroni.
Add milk, salt, and pepper. Dot with butter.
Cover with breadcrumbs and bake in moderate oven (375) for one hour. This will serve 8 people.

Circa 1950 recipe

Don't remember having this often made with salmon. We used the less costly mackerel.
