There is a tree online that has the family still in Scotland in the 1871 census, with William still living. It also lists his death in America in 1864. So, one or the other or both of those "facts" are in error! The 1871 census does list those parents, and those children. What is your source for his death?

the family still in Scotland in 1871 census

Alison Hay is still in Scotland, a ladies nurse, in the 1901 census looks to be unmarried

1881 census
Kinning Park Lanarkshire
Euphemia Hay 59 female, head b Edinburgh, Midlothian
Julien James Verel 23b Macduff, Banffshire

Emily Burgess Hay Verel died 8 April 1901 East Kilbride

so two of the children have no descendents

an Isabella F hay born 1850 Scotland is living in Devon England in 1901 as housekeeper so no children for her either
