SAINT-COEUR/ BOURG (BOURQUE) 1750-1790

I am trying to find the parents of Pierre St-Coeur who married Euphrosine Leblanc in Carleton, Quebec in 1790. On his marriage registration is says:
Son of Jean St-Coeur et Marie Armand ( i suspect it could be Normandeau, speculation!)

My search at this point is based on the memories of Pierre's son, Desire, who said:
My father, Pierre, was an only child and lost his parents at a young age. He was brought up by Francois Bourque (Bourg), uncle of Joseph Mathurin Bourg,( the famous missionnary priest of the Baie des Chaleurs et Gaspesie from 1773 to 1785 app.). After the death of his adoptive father he came to Carteton where he married Euphrosine Leblanc.

At this point this is my premise for research. There is a Francois Bourque in the 1752 PEI Census 20 years of age son of Jean Bourg and Francoise Aucoin . Then because of the deportation and the repatriation of some Acadians, I don't have the means to see trace of Francois Bourque/Bourg.

The 1798 Census of PEI shows many "Burke" but none that seems to fit and this census it too late since the adoptive father of Pierre was dead before he married in 1790.

Can someone help. I know of the family of Pierre Saint-Coeur after 1790, so do not need any of his descendants for now.

Someone with access to Malpeque region after the deportation would be helpful.
