Mary Van Vlack Cooper's maiden name was Sloot/Sloat/Slote and not Schutt.

Obediah & Mary Cooper were both born about 1755 and were still living on 26 January 1811 when they deeded out their land to their neighbor. I don't know what became of them after that but all but one of their children who came to Canada with them remained in Prince Edward County.

Mary's "close male relative" that I guessed about, James Sloot, was probably her cousin and not her brother if his birthdate of 1762 is correct.
ETA: I completely forgot that Mary had a half-brother back in Fishkill named James Whitney (ca.1762-ca1801) apparently also known as Eliphalet Whitney.

The Sloot genealogy is very difficult for me to get a read on since I don't have personal experience with their primary sources, but I expect that Mary Sloot was the daughter of Elias Sloot and Elizabeth Jung Schouten Sloot Whitney. Mary's first daughter was named Elizabeth and Mary had a grandson named Elias Van Vlack.

Henry Jr. and Mary Sloot Van Vlack may have had another son named Peter born circa 1784 who was aged 38 in the Prince Edward County Militia roll of 1822, and who was a witness at the wedding of (his niece) Eleanor Van Vlack in 1836. Or else this may have been a cousin.

I did go on a reseach visit to Picton, Ontario some years ago. The only thing I managed to find was the 1811 deed. What was really strange was that I had to pay a good price to see the historical documents in the County Hall, but on the opposite side of the same building I found the Historical Society which had the same documents for free!

Pretty place, though.

I can now say with complete confidence that this mystery is solved.
Obediah Cooper Spencer was the product of a "non-paternity event".
After forty years of genealogical, historical, and genetic research, including two DNA matches, it can now be shown that he was the biological son of a Mr. Hare (a son or grandson of Stephen Hare (1747-1845) of Haldimand, Northumberland, Ontario) by Ruth W. Cooper Spencer Weeks, and that he received the surname Spencer from his first step-father, who I believe to have been Charles Spencer of Prescott, Grenville, Ontario.
So the missing Mr. Spencer I have been seeking all these years was not from the Bay of Quinte after all.
