I checked the Nova Scotia Vital Stat site and found the marriage of William Ellis and Ann LeBlanc (translation-White) you can view this at
www.novascotiagenealogy.caThis is a free site - you may need to download a viewer program which is free onsite to see the actual record. They were married in 1884-William was a bachelor, age 38 and Ann a spinster age 39. The date suggested some "irregularity" in Jessie's birth. After some searching I found the following that you can check out. It is absolutely conjecture but suggests some areas of further research.
The 1881 Census -link below
https://familysearch.org/ark:/61903/1:1:MV6T-WD1There are several other children young children in the family of Remi and Elizabeth but mixed in with them is a 7-year old Jessie.
The LDS site above has the first name blank but when I checked the actual record there is no question that it is "Jessie" and she is female. This is a very unusual name for a female in this part of the province especially among the Acadians. In Cape Breton and Pictou County, the Scots had a daughter "Jessie" in almost every family. Don't know if the above is any help but happy hunting
