There is no particular indication of the surname, Hurley, in Stanley Parish at the time. The Sansom’s were connected with families out of Penniac, St. Mary’s Parish, York Co., NB (the Gilmore’s for example) but I do not find any Hurley’s in that Parish in 1851.
There were, in 1851, about 67 Hurley’s listed in NB. No John’s match the age range you suggest, the closest being in Chatham Parish, Northumberland Co., NB:

In 1861, in NB, there were several persons with variations of the surname. The most interesting was John Hurley (17) in Fredericton, York Co., NB, working for Donald and Ann McKenzie who operated Barker House at the time. See:
http://yorksunburymuseum.wordpress.com/2010/05/29/research-r... Meanwhile, in Stanley Parish, there are two Mary ‘Sanson’s’. One is age 8, and the names of her parents is faint and faded. They look like James (39) and Jane (35) ‘Sanson’, the couple above. With them, as well as their children, is a niece, Elizabeth Smith (9), possibly a clue to Jane’s maiden name. The other Mary (7), was the d/o John (37) and Mary (34) ‘Sanson’. Possibly John and Mary (Evans) Sansom. John (ca. 1824-NOV1892) m. Mary Evans in Douglas Parish 11SEP1851, so Mary was likely from Cardigan. John’s daughter, Mary Sansom, m. 2NOV1881 David James Griffiths of Cardigan. The progenitor of the Sansom family appears to be William Sansom (b. Somersetshire, England ca. 1792, d. Cardigan, Douglas Parish, York Co., NB 14MAR1876), who came to NB in JUN1822. The same seems consistently to be ‘Sanson’, and John (ca. 1824) was William’s son in 1851, but I have usually seen the name as Sansom. For example, in Thomas Dell Hurley’s death record, Mary is Mary Sansom.
In 1871, John and James ‘Sanson’ lived next to each other. John (47) was b. NB, and James (49) was b. Wales. That seems unlikely although, coming from Cardigan, the supposition seems easy to make. Neither of their daughters, Mary, are married. I do not find John in York Co. in 1871. He (31) and Mary (28) are in Stanley Parish in 1881, with children Anna (8), James (4) and William (2). In this case he was b. NB, and was Irish.
In Stanley Parish in 1891, John (42) and Mary (38) Hurley had Annie (18), James (14), William (12), Maggie (10), Frederick (7), Arthur (5) and ‘Hary’ (1). A feature of this census is that the respondents were asked for their parents’ birthplaces as well as their own. John gave himself as b. NB and his parents as b. Ireland. I think this may be accurate. The only person in 1851 that comes close is John b. ca. 1845 in Chatham Parish. On 13JUL1864, Denis Hurley was working on building a new ship when he fell into the hold and died soon after the next Sunday as a result of his injuries.
Dan Johnson’s abstracts include a reference to the Saint John, “The Daily Telegraph”, dated 28SEP1872:
“m. Church of Scotland Manse, Nashwaak (York Co.) by Rev. Wm Fogo, John HURLEY / Mary LAWSON eldest d/o James LAWSON, Stanley”
I think ‘Lawson’ should be ‘Sanson’ or ‘Sansom’.
