It is highly unlikely that the
Greek archives will release to you an entire list of birth records. It has been my experience that in order to get an old family document, one must first prove kinship, or have a Power Of Attorney on behalf of a proven relative.
Since you have an exact birth date, and I would assume a first name (?), and a possible last name for your grandfather, you might be able to locate his documents if you enlist the help of a friendly K.E.P. (Citizens Help Center) employee.

You will probably need to have some of your own personal records officially translated and verified by your local
Greek consulate. And you will need to attach a
HAGUE APOSTILE to those documents. Once you have established kinship, the process of retrieving old documents can start.
That your grandfather changed his name when he left Greece is a sticking point, but sometimes you can find helpful leads on the
Ellis Island passenger list sites. For instance, you can scope out with whom your grandfather sailed, and/or with whom he stayed once he arrived in the States. There is a good chance that his friends or travelling companions were also from Volos, and sometimes you can contact members of the friend's families in order to get more details..
