Galicia, Austria, Ukraine for Josefow and Suszno: super confusion.

Hi all! I am not understanding border changes for Josefow and Suszno. I'm not quite sure how to document these places. How can I find information on border changes and dates for these two towns? Well, Suszno was (and is) a village?

I've seen a number of references and because Suszno (for example) is such a small village there is virtually no history of it online anywhere! At least not that I can find. Wikipedia's article I think is something like a single sentence.

I have ethnic Germans that migrated from Germany to what is now Josefow and Suszno, Poland. They then immigrated to Canada followed by a final immigration to Texas.

I have church records from the mid to late 1800s that refer to those places as the Ukraine. I have immigration records to Canada of the same people calling it Galicia, Austria in 1902. Then US immigration records of the same people (going to TX) calling it Germany, in 1920.

In order to find other relatives, I need to understand the localities and how they changed over the years.

Also, what happens when a village switches countries/empires/monarchs? If they had a Census or something, how would I find out and where would I look?

It would have been much easier if it were simply Warsaw or something, but this is confusing.
