Strasel, Strassel, Faulk, Falk...... Need Help! Bavaria

I have come to a major road block. My Great Great Grandmother was Mary Faulk and was born on 06 Jan 1852 in Inglstadt Bavaria, Germany. She was Married to Ignatz Strassel who was born in Faichten alt atting Bavaria, Germany.They had three children Ignatz, August, and George. Her husband Ignatz fought in the Prussian war and recieved some kind of injury. He wanted his wife and children to leave Germany and go to America (the story has it that they had some kind of relation in Oregon.) She left in 1889 and immediatly went to Oregon. Supposedly he died not long after from the wounds or illness he had accuired during his time as a soldier.
I am not quite sure if the name spelling is correct. Strassel is how it is spelled today but i have found it spelled various ways on documents (land records, Naturalazation, death records.) Finding the information in the united states has not been to bad but when i researching further back for some kinda of tie in germany i am coming to a dead end. If anyone can help i would greatly appriciate it! Thank you,
