Where to focus family history research while in Ireland

Surnames: Kaley, Jeah/Jaye, Dempsey, Quinn
Am planning a trip to Ireland in the fall and wondering where to start to get the most of family history research. My brick walls are Great Grandfather William Kaley and his parents in Kinsale, Cork - religion maybe Free Baptist? Father was John and mother Katherine Jeah or Jaye. Wm. born March 1844. Wm. emigrated to Lowell, Massachusetts via New York and England, then settled in New Brunswick, Canada.
Other brick wall is Antony Dempsey and wife Letitia Quinn from either Offally or Wexford. They emigrated to New Brunswick, Canada in 1825 with five children, they were probably married about 1800 to 1803.

My head is swirling from irish research sites and want to focus on most effective places to go.

First thing is to be flexible/imaginative about spellings - Kaley sounds like Keilly/kealy to me - are you sure they are not catholics?

The 1881 Canadian census shows them as Free Will Baptists. Could have converted, but that would be quite a leap. He is also buried in the Methodist Cemetery, according to his death certificate at the age of 100!
