You have been busy on your end and an absolute life saver...I do believe I have found the right Wilfred Stephens, only because his name is Wilfred...lol but he was a sapper RE in 1871.

It is mentioned though which is supported by your last newspaper article of who went to Fiji from England is that Wilfred wasn't mentioned among them as apparently he came from Ceylon, India.

Please email me Bryan as I have a photo of Wilfred Stephens in uniform that they believe is a Bengal lancers uniform.

This photo is up at the Fiji Muesuem or used to be in the 70's. Unaware of what information was with it though. Still trying to find that out.
