What year was Florence born,...which surviving children, if any, traveled to Australia with them, and what were their names, and in what years were they born. ?

Was there ever any family mention of your great grandfather Charles Henry Smith, born in England, 1879-1880, ever having served in the British forces during WW1. ?

Because if he was still in Britain during WW1 he certainly would have done so, unless he was medically exempt or was engaged in war production work.

If he didn't serve in the British forces in WW1 that suggests that he "might" have emigrated pre WW1.

Is anything known about his place of birth. ?

You state that Charles Henry Smith died in new South Wales in Australia in 1919.

You also state, rather speculatively, which suggests that you haven't seen his death certificate, that he may have died in Balmain, which is a suburb of Sydney in New South Wales, and you think, presumably from family memories, that he may have died from gastroenteritis.

In 1919 there were 4 death registration for deaths which occurred in New South Wales, for people who had the surname of Smith and the first forename of Charles.

Only one of them was registered in the Balmain Registration District, and that is also the only one of the 4 in which the deceased father was called Henry.
